Preferences
Peel and slice the apples
Use a vegetable peeler or paring knife to peel the apples, if desired. Place the base of an apple on the chopping board. To make the first cut, start with the knife blade slightly offset from the stem, about ¼”, and slice down. Repeat on the other 3 sides to core the apple. Place the apple pieces flat-side down on the chopping board and cut into ¼”-thick slices. Repeat with the remaining apples.

Combine the ingredients
Transfer the apple slices to a casserole dish. Add the water and cinnamon, if using, and cover.

Slow cook the apple butter, covered
Place the apples on the bottom shelf of the June Oven. Cook, covered, using the Slow Cook setting for 3 hours on high or 6 hours on low. June will notify you when it’s time to blend the apple butter.

Blend the apple butter and wipe the dish rim
Take the apple butter out of the June Oven and remove the lid. Carefully blend the cooked apples into applesauce with an immersion blender. To prevent splattering, tilt the casserole dish to create a deeper well of applesauce so your immersion blender head is submerged. If using a blender, transfer the cooked apples to a blender base and puree until smooth. With a wet paper towel, carefully wipe the hot casserole rim free of any applesauce to help with clean-up later.

Continue cooking the apple butter, uncovered
Return the uncovered casserole dish with the applesauce to the June Oven. Continue to cook, uncovered, using the Slow Cook setting for 4 hours on high or 8 hours on low. June will notify you when the apple butter is ready.
Cool the apple butter
Remove the apple butter from the June Oven and stir well. Set aside, uncovered, to cool completely.

Stir and serve, or store
Stir the apple butter again until it is evenly mixed. Add a pinch of salt, if desired. Serve at room temperature or cold, or store in airtight containers and keep in the refrigerator or freezer.
