Cut the mac and cheese
Run a paring knife around the edge of the pan, then cut the mac into 32 pieces, each about 2“ x 1” (make 3 cuts in one direction to make 4 sections and 7 cuts in the other direction to make 8 sections). Using an offset spatula or fork, remove the bites from the pan and set them on a parchment-lined June Pan.

Coat the bites
Working a few at a time, place the macaroni bites in the bowl with the flour and gently roll them around until it they are lightly but completely coated. Tap off any excess flour. Dip the floured bites in the bowl with the beaten eggs and gently roll them around until it they are completely coated. Allow excess egg to drip back into the bowl. Dip the bites in the bowl with the panko mixture and gently roll them around until it they are completely coated.
Place in the June Air Basket
Place the breaded bites widest-side down on 2 June Air Baskets set over June Pans or plates to catch the crumbs, evenly dividing the 32 bites between the Air Baskets. Repeat all steps for dredging until you have breaded all the bites.
