Preferences
Make the wet coating
Crack the eggs into a large bowl. Add the oil. Whisk until lightly beaten and set aside.

Cut the okra
Trim the tops and tails from the okra. Cut the okra into ¾” pieces.

Soak the okra in the wet coating
Transfer the cut okra to the large bowl with the egg. Stir to coat the pieces in the egg. Allow the okra to soak for 15 minutes.

Preheat the June Oven
With a June Air Basket lined with foil in the bottom position, preheat the June Oven to 400°F on the Air Fry setting using the button below.

Grind the panko
Meanwhile, place the panko in a food processor and pulse 12-15 times until the crumbs are lightly crushed but not fine.

Make the dry coating
Transfer the panko to a shallow dish. Add the salt, garlic powder and cayenne, if using. Stir to combine.

Dip the okra in the dry coating
Working in batches, scoop several pieces of okra with a slotted spoon from the egg mixture. Allow any excess egg to drip away, then place the okra in the panko. Gently roll the okra pieces in the panko until they are completely coated, using your fingers to press the panko into the okra pieces so all sides are completely coated. Place the breaded okra in the June Air Basket set over the June Pan to catch the crumbs.

Spray the okra with cooking spray
Generously spray the nonstick cooking spray over the okra so that each piece is coated in oil.

Air fry the okra
Slide the June Air Basket into the middle shelf position with a foil-lined June Air Basket in the bottom shelf position. Air fry the okra for 6 minutes, rotate the air basket 180 degrees when June notifies you, continue cooking for 6 more minutes or until golden brown. June will notify you when the okra is ready.
Serve
Remove the June Air Basket from the June Oven and carefully transfer the okra to a serving dish. Serve immediately.
