Preheat the June Oven
With the shelf in the middle position, preheat the June Oven to 375°F to the Bake cook mode using the button below.

Make the flax egg
Combine the ground flax and water in a medium bowl. Mix to combine and set aside.

Combine the dry ingredients
In a large bowl, whisk the pancake mix, baking powder and baking soda until combined. Set aside.

Combine the wet ingredients
Add the water, apple butter, oil and apple cider vinegar to the bowl with the flax egg and whisk to combine.

Mix the wet and dry ingredients together
Add wet ingredients to the dry ingredients and gently stir just until combined. Do not overmix. Lumps are fine.
Spread batter in June Pan
Lightly coat the June Pan with nonstick spray. Scrape the pancake batter into the prepared June Pan. Using a greased spatula, spread the batter evenly in the June Pan. Scatter toppings evenly over the pancake batter, if using.

Bake the pancake
Transfer the June Pan to the middle shelf of the June Oven. Bake the pancake 10 minutes, until the top is lightly browned in places and feels firm to the touch. June will notify you when the pancake is ready. If desired, follow directions on your June to continue cooking.
Cool and slice the pancake
Remove the pancake from the June Oven and allow to cool 1 minute in the June Pan. If serving immediately, carefully slide the pancake onto a chopping board before slicing into 12 squares or use cookie cutters for fun shapes. If storing, slide the pancake onto a wire rack to cool completely before cutting.

Serve or store
Serve the pancakes hot, or freeze in resealable bags and reheat as needed.
