Begin slicing the loaf
Starting about 1” from one end of the loaf of bread, make a crosswise cut down into the bread, stopping just before you slice through the thick bottom crust, leaving the loaf intact. Move your knife over 1” and make another cut in the same way, being careful not to slice all the way through the bread. Continue to make crosswise cuts down the length of the loaf, about 1” apart, until you reach the other end of the loaf.

Finish slicing the loaf
Turn the bread 90 degrees and repeat this process lengthwise, starting about 1” from the edge of the loaf and making cuts 1” apart, creating a grid pattern in the loaf of bread. When making your cuts, make sure your knife is going down nearly to the bottom crust, but not through it.
Make the garlic butter
In a small bowl, mix together the melted butter, olive oil, garlic, Italian seasoning, and salt. Set aside.
½ cup melted butter
3 tablespoons extra-virgin olive oil
1½ teaspoons crushed garlic
1 tablespoon Italian seasoning
½ teaspoon salt
measuring spoons
spatula
small bowl
Add the garlic butter to the sliced bread
Using a pastry brush, brush the garlic butter into every slice, gently pulling the slices open as you go to ensure the garlic butter is distributed evenly throughout the loaf. Use all the butter.

Prepare the cheese mixture
In the same small bowl, mix together the Boursin and Italian cheese blend. Incorporate any garlic remaining in the bowl from the garlic butter.
1 package Boursin
¾ cup Italian-style shredded cheese blend
Add the cheese mixture to the sliced bread
Using a small offset spatula, butter knife or your fingers, divide the cheese mixture evenly between each slice of bread, gently pulling apart the slices to incorporate the cheese throughout the loaf.
