Grate the cheese
Using a zester, finely grate the Parmesan cheese into a medium bowl. Measure ½ cup of cheese, lightly packed. If you have less than ½ cup, grate a bit more cheese to make a full ½ cup.

Bake the frico
Carefully transfer the egg pan to the middle shelf of the oven. Cook the crisps 7 minutes, until the cheese is melted, bubbly and beginning to turn a light golden brown. June will notify you when the crisps are ready.
Cool and serve the frico
Remove the egg pan from the oven and set on a heat proof surface. Let the crisps cool in the pan 5 minutes before using a rubber spatula to gently lift each crisp from the egg pan well. Place the crisps on a cooling rack to cool completely. Serve at room temperature. Frico are best served the day of baking, but can be stored airtight at room temperature for up to 2 days.
