Cut the potatoes
Cut the potatoes into ½"cubes with a knife.

Chop the cilantro
Trim any woody stems off the cilantro bunch with a knife and then chop the leaves and tender stems roughly.

Crush the garlic
Crush the garlic into a paste with a garlic crusher, mortar and pestle or knife.

Juice the lemon
Juice the lemon half with a citrus juicer and reserve the juice in a small bowl.

Arrange the chicken and potatoes
Place the chicken thighs on the June Pan and arrange the potatoes around them.

Add the oil, lemon and soy sauce
Drizzle the olive oil, lemon juice and soy sauce over the chicken and potatoes.

Season the food
Sprinkle the salt and pepper over the chicken and potatoes.

Add the garlic
Distribute the garlic equally between the chicken thighs and rub it evenly over the skin with your hands or a spoon.

Add the cilantro
Sprinkle the cilantro over the chicken and potatoes, reserving 2 tablespoons for garnish.

Insert the June Food Thermometer horizontally in the middle of the thickest part of one chicken thigh, avoiding the bone.

Roast the chicken and potatoes
Place the chicken on the middle shelf of the June Oven and plug the June Food Thermometer into the closest jack. June will notify you when the chicken is done.

Remove the chicken and potatoes from the June Oven, garnish with the reserved cilantro and serve.
