Lamb and Beef Meatballs with Rice

Preferences
Prepare the rice
Add the rice, water and salt to the June Pan. Stir gently to combine, then spread the rice out in an even layer across the pan.

Bake the Rice
Transfer the June Pan to the middle shelf of the June Oven. Cook 23 minutes, until the rice is tender and the water is absorbed. Do not open the June Oven door while cooking. June will notify you when the rice is ready. If the rice has not absorbed all the water, follow on-screen instructions to continue cooking.

Make the meatball mixture
To the large bowl, add the beef, lamb, chopped red onion, cilantro, tomato paste, garlic, cumin, coriander, sumac, salt, oregano, cinnamon, cardamom and pepper. Using your hands, gently mix the ingredients together until evenly incorporated. Do not overmix.

Form the meatballs
Gently form the meatball mixture into 8 torpedo shaped meatballs, being careful not to pack the meatballs too tightly. Place the formed meatballs on a second June Pan or a plate until ready to use.

Season the vegetables
Add the sliced onion and cherry tomatoes to a medium bowl. Add the olive oil and salt, and toss to coat the vegetables in the seasoning. Set aside until ready to use.

Add the meatballs and the vegetables to the rice
When June notifies you, remove the rice from the oven and set on a cooling rack. Add the vegetables on top of the rice, on both sides of the pan, leaving an open area in the middle to place the meatballs. Arrange the meatballs over the rice in the empty area, leaving a little space between them for air to circulate.

Cook the meatballs and vegetables
Place the pan on the middle shelf of the oven and plug the thermometer into the jack. Roast the food until the meatballs are cooked through and the vegetables are tender, about 25 minutes. June will notify you when the food is ready. If desired, follow on-screen instructions to continue cooking.
Start the tzatziki
Place the yogurt in a medium bowl. Add the grated cucumber, sliced mint leaves, garlic, salt and oil to the yogurt. Mix with a spatula until all ingredients are evenly incorporated.

2 tablespoons extra-virgin olive oil
Zest and juice the lemon
Zest the lemon with a zester or the fine holes of a grater and add the zest to the tzatziki. Slice the zested lemon in half crosswise. Juice the lemon directly into the bowl with a citrus juicer. Mix again until all ingredients are evenly incorporated. Set aside until ready to serve.

Remove the meatballs and stir the rice
Remove the pan from the oven and set on a cooling rack or heat proof surface. Carefully remove the meatballs to a serving platter or plates. Using a spatula, gently fluff and mix the rice together with the tomatoes and onions, evenly incorporating the flavorful juices from the meat and vegetables.

Garnish and serve
Serve the meatballs and rice together and garnish with chopped cilantro. Serve hot, with tzatziki alongside.
