“Protein-Style” Turkey Burgers

Preferences
Make the burger mixture
Combine the ground turkey, oil, salt, pepper and garlic powder in a large bowl. With a spatula, gently mix until thoroughly combined. With your hands, scoop about ⅓ of the burger mixture from the bowl and shape it into a patty. Place the patty on the June Roasting Rack set within the June Pan. Repeat with the remaining burger mixture to make 3 patties of equal size.

Insert the June Food Thermometer
Horizontally insert the June Food Thermometer into the geometric center of one patty.

Broil the burgers
Transfer the turkey burgers to the middle shelf of the June Oven and plug the June Food Thermometer into the jack. Broil the burgers until they are cooked through, about 26 minutes. June will notify you when the burgers are ready.
Mix the mayonnaise
While the burgers are cooking, place the mayonnaise and yogurt in a small bowl. Add the tarragon, shallots, lemon juice and pepper flakes. Stir to combine.

Melt the cheese on the burgers
Remove the turkey burgers from the June Oven and remove the June Food Thermometer. Place a slice of cheese on each burger and return the burgers to the June Oven. The residual heat will help melt the cheese while you assemble the lettuce wraps.

Assemble the burgers
To assemble the burger, lay 1-2 large lettuce leaves on top of each other on a plate or serving platter. Spread about 1 tablespoon of the prepared mayonnaise in the center of the top lettuce leaf and top with one onion slice. Remove the turkey burgers from the June Oven. Using a flip spatula, transfer one turkey burger to the prepared lettuce. Wrap the burger completely in just the top piece of lettuce. Holding the lettuce closed with your hands, gently flip the wrapped burger over and place it seam-side down in the remaining piece of lettuce. Wrap the second lettuce leaf completely around the burger. Secure with a toothpick, if desired.

Repeat with the remaining two burgers. Slice each burger in half, if desired, and serve with more mayo to taste.
