Preferences
Make the breadcrumbs
Tear the rye bread into pieces and place in the bowl of the food processor. Pulse until coarsely chopped crumbs are formed. Alternatively, coarsely chop the bread. Measure ½ cup of bread crumbs and reserve the rest for another use.

Soak the breadcrumbs
Add the breadcrumbs to a large bowl and add the milk. Stir to combine and let stand for 5 minutes.

Add the rest of the ingredients and mix
Add the beef, cheese, sauerkraut, onion, egg, garlic, mustard, salt, pepper and coriander. Add the allspice and cloves, if using. Mix the ingredients with your hands until evenly combined.

1 teaspoon dijon mustard
¾ teaspoon salt

1 pinch ground allspice

Form the meatballs
Lightly form the mixture into about 28-30 bite-sized meatballs, about 1 tablespoon each, being careful not to overwork the mixture or pack the meatballs too tightly. Space the meatballs evenly across the June Roasting Rack set in a June Pan.

Insert the June food thermometer
Horizontally insert the June Food Thermometer into the geometric center of the largest meatball.

Broil the meatballs
Transfer the pan to the middle shelf of the June Oven and plug the June Food Thermometer into the jack. Roast the meatballs until they are browned and cooked through, about 18-21 minutes. June will notify you when the meatballs are ready.

Remove the meatballs from the June Oven. Serve with Russian dressing.
