Preferences
Preheat the June Oven
With a June Air Basket lined with foil in the bottom position, preheat the June Oven to 390°F on the Air Fry cook mode using the button below.

Make the crunchy coating
Add pork rinds to the bowl of a food processor until it is halfway full. Pulse the rinds until they are crushed and resemble panko bread crumbs. Transfer to a large bowl and continue crushing the rinds in batches until you process the full amount.

Make the dry coating
In a large bowl, combine the almond flour, salt, poultry seasoning, garlic powder, dry mustard and cayenne. Whisk to combine.

Make the wet coating
In a medium bowl, combine the egg, hot sauce, water and oil. Whisk until lightly beaten.

Dip the chicken in dry coating, the wet coating and the crunchy coating
Place one drumstick in the bowl with the almond flour dry coating and roll it around until it is lightly but completely coated. Shake off any excess. Dip the chicken in the bowl with the wet coating and roll it around until it is completely coated. Allow excess egg to drip back into the bowl. Dip the chicken in the crunchy pork rind coating, rolling it around until it is completely coated. Shake off any excess crumbs and place the chicken in a June Air Basket set over the June Pan to catch any crumbs. Repeat with the remaining chicken pieces.

Insert the June Food Thermometer horizontally into the middle of the thickest part of the largest drumstick, avoiding the bone.

Spray with cooking spray
Generously spray drumsticks with nonstick cooking spray. The oil will help brown the chicken.

Air fry the chicken
Slide the June Air Basket into the middle shelf position with a foil-lined June Air Basket in the bottom shelf position. Plug the June Food Thermometer into the jack. Air fry the chicken until it is cooked through and golden brown, about 35 minutes. June will notify you when the chicken is ready.
Serve the chicken
Remove the chicken from the June Oven. Transfer the pieces to a platter and serve immediately.
